Chocolate Lava Cake


2 birthdays in the family a span of 4 days!! So this time thought of giving the usual sponge cake a miss..and made Lava Cake Muffins and one small cake in an aluminium foil rectangular container.

Ingredients :
*100g dark chocolate, chopped- I used Bournville Rich Chocolate 
*100g butter
*150g light soft brown sugar-I used 100gm normal white sugar
*3 large eggs
*1/2 tsp vanilla essence
*50g plain flour
*coffee powder / cocoa powder (optional)

Method
11. Preheat the oven to 230C. 
22. Put the chocolate and butter in a heatproof bowl and set over a pan of hot water (or alternatively put  in the microwave) and stir until smooth, then set aside to cool slightly for 15 minutes.
33. Beat the eggs and Mix in the sugar, and keeping mixing with the eggs, and add  into the chocolate-butter mix followed by the vanilla extract and finally the flour. 
  4. Spray/Smear oil in the muffin tray and the aluminium container. Sprinkle cocoa powder/coffee powder to line the moulds (optional) 
  5. Divide the mixture among the muffin moulds and aluminium container.
46. Bake the muffins for 7-8 minutes at 230 deg C and the aluminium container (slightly bigger) for 12-13 minutes or until the tops are firm to touch but the middles still feel slightly squidgy. Carefully run a knife around the edge of each pudding, then turn out onto serving plates and serve with single cream/vanilla icecream or have it just like that.

CUPCAKES ....

...To satiate sugar craving of two little girls....

To put an end to constant whining of two little girls on a weekday evening, when, with Maths exam looming large the following morning, made the option of going to a cake shop/bakery non-feasible, a quick fix solution was to bake these cup cakes.....

Ingredients
All purpose flour (Maida) - 1 3/4 mug (black & white)
Sugar - 3/4 mug (same mug as above)
Eggs -3
White Oil - 3/4 cup of same mug
Baking powder - 1 tbsp
Coffee powder - 1.5 tbsp (may be more/less as per preference)
milk - 1/4 cup
vanilla essence - a few drops
dry fruits - anything ...cashew/raisin/walnut/almonds....I didnt use any due to non-availability
Chocolate sauce for topping

Procedure :

1. Beat the eggs along with the sugar.
2. Mix Maida and baking powder and if using cocoa powder, mix it along.
3. Mix the Whipped egg+sugar and oil in a mixing bowl.
4. Add the maida-baking powder mix to the wet mixture and fold it in.
5. Mix well to get rid of any lumps, if formed.
6. Add vanilla essence, coffee powder and mix.
7. Preheat a greased cup cake / muffin tray at approx 170 deg C
8. Pour the batter in the moulds upto 3/4 level.
9. Decorate the top of each mould (filled with batter) with chocolate sauce/dry fruits/any other sauce as per taste
10. Bake at 170 deg C for 15 minutes.

Delicious cupcakes / muffins are ready!!!

The girls gobbled down the hot cupcakes fresh off the oven...their giggles and joyous look of almost divine pleasure were enough to erase any memory of the nagging and whining of the previous hour.

Simplest of Cake Recipes


The simplest of Sponge cake recipes learnt during my school days.....which so resonates the tagline of my blog..."nothing fancy or out of the way...."

Have made it countless number of times and it has never failed to bring a smile on the faces of my loved ones....

Ingredients :
eggs : 3
Maida : 2 tea cups
Oil/Butter : 1 cup
Sugar (white/castor sugar) : 1 cup
Vanilla essence : a tsp
Baking powder : 1 tbsp
Cashews/Almonds/Raisin : as per choice
Coffee powder / Chocolate powder/Cocoa : optional
Chocolate sauce for decoration : optional

Procedure :
Preheat oven to 200 deg C
Whip the eggs
Mix Maida and Baking powder and Chocolate powder/cocoa
For ease of mixing powder the sugar (optional)
Mix oil/butter, sugar and add the whipped egg
Add the maida/flour-baking powder-cocoa mix into the wet mix of butter/oil-sugar-egg.
Mix well with ladle or electric mix.
Add the vanilla essence
If adding coffee powder, add now
Also, add the dry fruits now into the cake mix

Also preheat the oil/butter smeared container in which the cake is to be baked
Pour in the batter
Bake at 180-190 deg C for 20 minutes

Cool.
Unleash your creativity to decorate as you wish...my decorations are quite minimalistic ..
Sometimes I use milk powder with drops of milk to make a moist paste to "write" on the cake

The little chef and her Cookies



Last year during her summer camp, 'cooking up a storm' was one of the activities where she'd been a part of a group of 6+ somethings who'd baked some lush, gooey, chocolatey , melt-in-the-mouth cookies! Not happy with just the two cookies which each of them were allowed to bring back home and also share with a choco-obsessed loving Mom, then and there she'd declared that she'll bake more of these.....the two paged photocopy of the recipe was carefully preserved and the intermittent reminders in the form of mild whinings were meted out to the not-too-enthusiatic-about-baking Mom...who turned a deaf ear and hardened her heart, determined not to be emotionally blackmailed!

Now that she was a year older, and hence more persistent and her arguments were logical, and to top it all, the final exams were over and hence free time was in abundance, the Mom couldnt continue feigning selective deafness and had to succumb to the pressure giving free reign of her kitchen to the little lady!

Out came the precious list and recipe....and off they (the reluctant Mom & the oozing-with-enthusiasm mini-chef) went and brought back a bag full of stuff.....sugars of different kinds, unsalted butter etc etc...

Unfortunately after reaching home, the Mom realised that her kitchen scale was broken and hence the measurements were approximate...but the cookies turned out yum...and could give any professionally baked cookies a run for their money! ;)
May be beginners' luck ...... but the mini chef and Mommy assistant were immensely satisfied with the outcome!!!!


Ingredients (as given in the printed recipe..lot of substitutions were made)


125 gm of unsaltede butter
90gm of soft light brown sugar
90 gm castor sugar
125 gm chocolate spread (used nutella + Hershey's chocolate syrup)
200gm plain flour
30 gm cocoa powder
1 tsp baking powder
2-3 drops vanilla extract (used 1.5 caps of vanilla essence)
150 gm of white chocolate chips (used 1/2 bar of Cadbury's Dairy Milk, broken into unequal bits)
1 egg
A pinch of salt


Procedure (as given in the recipe ...followed more or less accurately except for the weight measures which were approximate)
1. Preheat oven to 180 deg C. Cream the butter and both types of sugar in a large bowl until the mixture turns creamy.
2. Still using the electric whisk, beat the egg, chocolate spread (2-3 tsp of nutella+1/2 cup of Hershey's chocolate sauce in our case....that's all there was at home), vanilla essence/extract into the creamed butter and sugar mixture, until fully mixed in.
3. Sieve the flour, baking powder, cocoa powder and salt and mix in a bowl.
4. Add the sieved flour mixture with the chocolate mixture and mix them together. Stir in the chocolate chips.
5. Spray /brush some oil on the baking tray (not mentioned in the recipe).
6. Place 6-7 heated dessert spoonfuls of the cookie dough on the baking tray leaving space between each mound so that they can spread as they cook.


7. Bake for 14 minutes.


8. Take the trays out of the oven and leave the cookies to set for 2-3 minutes. When set transfer onto a cooling rack.


Enjoy the cookies...fresh off the oven....or later ....when they're cold and crispier ...with tea / milk .....

Baked Fish (Bhetki) on a bed of grated Cabbage

 Bhetki Fillets, juicy & succulent. The first thought which comes to mind is Fish Fry (the Bong way). But the past few days have been an overdose of Fish Fries and hence decided against it.

As necessity is the mother of ALL inventions or discoveries and in this case recipes, decided to put to use the only vegetable available at home and 'create' something new. Well..... was definitely skeptical as to how fish and cabbage would taste....So with apprehensions mounting regarding the outcome of the dish and how it would be received by my in-house trio (father & daughters) of food tasters/critics/consumers etc etc, I went ahead.

Ingredients :
Bhetki fillet - around 1.5 kgs which yielded about 12-15 boneless pieces
Vinegar / Lemon juice-1/2 cup
Ginger-garlic paste - 2 tbsp
Onion juice (optional)
Green chilli paste (optional)
Salt
Pepper - freshly ground
chilli flakes
coriander leaves - finely chopped
grated cheese- 1 cup
butter
finely chopped cabbage - 1
2 onions - diced

Procedure :
1. Marinate the bhetki fillet / steak in a mix of vinegar/lemon juice + ginger-garlic paste + onion juice (optional) + green chilli paste (Optional) + very finely chopped coriander leaves + salt/rock salt + freshly ground pepper

2. Finely chop / grate the cabbage. I chopped mine. You may blanch the chopped cabbage...I didnt as i wanted it to retain its crunchiness.

3. Preheat the OTG in bake mode at 250 deg C.

4. Spray / smear butter/oil on the baking tray. Make a bed of the grated / chopped cabbage. Squeeze juice of 2 (or more lemon depending on how tangy you like) lemon. Sprinkle salt (in moderation) & pepper . Mix well and make an uniform bed of cabbage.

5. Place the diced  onions on the cabbage bed. and also scatter some tiny butter cubes on the bed.

6. Now place the marinated fish fillet / steak on the cabbage bed. With a pastry brush, liberally brush the top of fish pieces with melted butter or oil. I had used butter. Now garnish liberally with grated cheese. And finally sprinkle roasted red chilli flakes..


7. Set the OTG at aroun 180 deg C in bake mode for around 12-15 minutes or till the cheese turns golden brown. Prick the fish with a fork to ensure it's cooked. Do not over bake/cook the fish....it'll turn fibrous an chewy.

8. Serve with some crispy fried potato wedges or roasted baby potatoes (as in Sl.13 of this procedure).

And the unanimous verdict was 'YUMMILICIOUS'!!!!

A Quick Banana Cake


When your fruit basket is weighed down by a bunch of over ripe bananas that nobody in the family (including you) will touch, you know something HAS to be done to avoid the fruits from going straight to the bin. Well, that's exactly how this cake happened to happen in my kitchen. Otherwise I am not much of a baker and would never ever volunteer to bake a banana cake, of all things..... ;)

Ingredients :


Ripe Bananas - 3
Eggs -
Flour / Maida - 2 cups
Sugar - 3/4 cup
White Oil - 1 cup
Baking powder - 1 tsp
Vanilla Essence - 1 tbsp
Fresh Cream / malai - 3 tbsp
Cinnamon sticks - 2-3"
Broken Cashew - a handful
Salt - a pinch

Procdeure :
1. In a mixie jar, put the following and mix:
     a) peeled and chopped bananas
     b) eggs
     c) sugar
     d) fresh cream / malai
     e) oil
  Pour into a wok like vessel or mixing bowl.

2. In a container, pour the flour, baking powder, powdered cinnamon and a pinch of salt. Mix well.

3.Pour the dry mix into the wet one. Gently fold in to combine.

4. Add vanilla essence & cashew pieces. Fold in .

5. Pour the batter into a preheated and greased cake mould. The oven is to be preheated to 250 deg C for 8-   10 min.

6. Set the OTG in 'baking' mode, at temp 175-180 deg C for 45 minutes.

 

Insert a fork / toothpick into the cake and if it comes out clean, the banana cake is done.

Let it cool in the oven and then cut a thick slice ...the taste is mildly sweet with a hint of banana flavour.
Eat it just as it is . I had mine with chocolate sauce, garnished with roasted almonds! And despite being quite a banana hater, I loved the cake!!

Roast Chicken on a bed of vegetables.....served with butter rice


The success and satisfaction of a job well done, egged me onto to try out a simpler chicken roast unencumbered by a deluge of ingredients and sauces. While at it, habit led me to google and amongst the various Chicken roast recipes, it was this recipe  which appealed to me due to its simplicity and ready availability of all ingredients....of course slight changes, modifications were made here and there.

So here goes my version...

Ingredients :
Whole chicken with skin on - 1.4 kg
Rock Salt
Pepper
Chili flakes
Lemon juice - of 2 medium sized lemons
Dried oregano 
A mix of dried thyme-basil-rosemary-parsley 
Lemon - 1 whole 
Vegetables - lots of roughly diced vegetables. I used carrot beans, baby corns, potatoes
Mushrooms  - about 12 button mushrooms
Garlic cloves - 10-12
Coriander leaves - a handful of chopped coriander
Butter - about 40 gms.

Procedure
1. Mix lemon juice + rock salt +pepper+chili flakes + dried oregano+herb mix and rub the it all into every possible surface of the chicken and also inside the cavity.
2. An hour's marination is adequate but the longer the marination the better. I marinated it for 24 hours, unplanned and unintentionally.
3. While dicing the vegetables and mushrooms, switch on the oven (I used OTG) for preheating, at 250 deg C.
4.Spray/smear the baking tray with butter/olive oil
5. Arrange the diced vegetables on the tray. Sprinkle salt and pepper and drizzle/brush on some butter/olive oil on the vegetables.
6. Smear semi melted butter all over the chicken and also inside its cavity.
7. Take a lemon, prick it all over. Microwave it for 15-20 seconds and then push it into the chicken cavity along with some chopped coriander and garlic cloves.
8. Place the chicken on the vegetable bed. 
9. I used 'BAKE MODE' of the OTG for 50 minutes first.
10. Place the chicken on vegetables into the oven. After 10-15 minutes (till the chicken has a crispy golden coating), reduce the temperature to 200 deg C.
11. After lapse of 45-50 minutes, turn the chicken around. Baste the chicken and toss the vegetables around. Sprinkle some water if they are darkening/burning


12. After turning the chicken around, cook at 200 deg C for another 40-50 minutes....making it a total of 90-100 minutes cooking time..
13. Take it out of the kitchen. Keep it completely covered for about 10 minutes (I covered with my large wok upside down)

While the chicken was cooking and the aroma of melted butter wafted from the kitchen, my olfactories started working overtime, and suddenly I felt  a craving for rice.....took out some cooked rice leftover from the lunch and in a wok, melted a tbsp of butter, threw in a bay leaf, peppercorns, pinch of sugar & salt. Added the plain white rice, tossed it around to coat the butter-salt-sugar-pepper mix uniformly and hey presto! a heavenly butter rice to go with the chicken and vegetables, was ready!

Pan(fried) Pseudo Pizza!!


It looks like a small sized pan pizza. Tastes quite like one....well, almost! But the difference doesnt make it any less tasty! Inspired by Indira Mukherjee, I have adapted to make it simpler and faster. This recipe suits me fine on the "Onno kichhu khaabo" (Something different from regular stuff!!) days.

Here goes the recipe :


Ingredients : yielded 4 nos. 1/2" thick 6" dia pseudo pizzas
All purpose Flour (Maida) & Milk in 1:1 ratio
Egg - 1 for 1 cup Maida:1cup milk (200ml cup)
Any Grated / finely chopped vegetables like carrot, bean, cabbage, capsicum, cauliflower/broccoli florets, babycorn etc
Garlic - 3-4 cloves - chopped
Salt
pepper
Chili flakes
Oregano & dried herbs-I used FabIndia's Chili-Oregano & Italian seasoning
Grated Mozzarella cheese - 1 bowl (200ml)
For topping -Boiled corn kernel /Chicken sausages/nuggets/mushroom/paneer cubes/soya chunks etc etc
Diced Onions - 1 medium

Procedure :
1. Mix Milk and Maida and add the egg, Salt & pepper Mix well with a hand blender. The batter is thick but of pouring consistency.

2. Add the chopped garlic and all the grated/chopped vegetables.

3. Keep the topping ready (the choice is yours...I used paneer cubes+diced onions on one occasion and chicken sausages+corn kernels+diced onions on another) stir fried or sauted.


4. A small pancake frying pan makes the base preparation a cake walk. Pour a ladle full of veggie mixed batter and spread it to cover the whole pan. Pour some more to increase the thickness of the base. Cook on minimum heat. While frying the base on gas stove top, keep the oven ready for next step by preheating oven (I used my OTG) at around 225-250 deg C.



5. Flip the pancake pizza or pseudo pizza base and let the other side cook.



6. Now on a flat ovenproof plate, place the (Pseudo) pizza base, arrange the toppings and sprinkle desired quantity of grated mozzarella. Sprinkle the italian seasoning and dried oregano and other herbs of choice.






 7.Place it in the preheated oven on Grill mode at 225-250 deg C for around 5-7 minutes or till the cheese melts and gets a golden colour!



Ready to serve!!

Baked fish .....

Served with greens, steamed vegetables and crispy fried baby potatoes


Easy to cook, healthy and great to taste.....

Ingredient: 

I . For the baked fish :
1. Thick fillet of Bhetki Fish  - about 8 - 10
2. Ginger - garlic paste - 1 tbsp
3. Juice of lemon - 1/4 cup
4. Grated onion / onion juice of 1 big onion
4. Spinach - 5-6 bunches
5. Firm tomatoes - 4
6. Cheddar Cheese grated - 1 cup
7. Butter or EVOO
8. Crushed pepper
9. Chilli flakes
10. Dried oregano

II. Vegetables I used :
1. Tender Baby corns - 8-10
2. Tender small sized carrots - 8-10
3. French Beans -10-12
4. Green peas - 1 cup
Any other vegetables/greens like cauliflower/broccoli florets / cabbage leaves / crunchy ice lettuce etc may be used
5. baby potatoes  - 1/2 kg

III. Others 
1. Rice flour - 1/2 cup
2. Turmeric - a pinch
3. Oil for deep frying
4. Salt
5. Chilli powder

Procedure : in the sequence I do to save time
1. Marinate the fish fillets in Ginger-garlic paste + onion juice + lemon juice + salt + pepper for a couple of hours or overnight (as i do).
2. Steam all vegetables at II of Ingredients. Dont let them lose their crunch
3. Spray or smear the baking tray with butter or Extra Virgin Olive Oil (EVOO)
4. On it make a bed of whole spinach leaves.
5. Place the marinated fish along with the marinade on the leaves.
6. Roughly chop 3-4 bunches of spinach and garnish the marinated fish fillets with the leaves.
7. Sprinkle liberally crushed black pepper, chilli flakes, oregano, small cubes of butter or drizzle 2-3 tsp of EVOO.
8. Garnish  with grated cheese.
9. Slit the tomatoes on top cross-wise. push in a couple of peppercorns and a pinch of salt into each tomato. smear some butter/EVOO.
10. Put in the baking tray into the preheated oven (temp around 280-300 deg F) for 10-12 minutes.

11. If necessary, i.e if the tomatoes are still raw, put the tomatoes back in the oven for another 5-8 mins.
12. While the baking is being done, in a non-stick pan, smear some butter and saute the steamed veggies with a sprinkling of salt & pepper.
13. Make a batter of rice flour with water, salt, chilli powder and a pinch of turmeric. Dip the steamed potatoes in the batter and deep fry to get crispy fried wholebaby potatoes .

Arrange the baked fish fillets along with the spinach leaves, sauted whole vegetables, crispy fried whole potatoes and serve.

Nameless Delight!

(Baked Bread stuffed with the goodness of vegetables, chicken and anything & everything healthy and tasty)
A dish without a name!

So dear friends, the onus lies on you to find one for this dish, once you read about it!
When visiting a cousin, she'd made this delicious preparation.
With hardly any time to note down or even hear the recipe, all she could say was "make it like a Cake sans the sugar but plus some salt and add anything as filling to it"...

She'd made it with chicken...when I decided to try out this Cake sans the sugar, I decided to make it more wholesome, and added chicken and some veggies too....

So without much ado, here goes the recipe...


Ingredient :
A. For the filling
1. Boneless Chicken pieces - 150-200gms
2.Onion finely chopped - 1
3. Cardamom-2
4.cinnamon stick - 1 (1" piece)
5. Bay leaf
6. Ginger + Garlic paste - 1 tsp
7.Carrot - blanched
8 Beans - blanched
9. Baby corn - 4-5 sliced
10. Butter - 2tbsp
11. Crushed pepper - 1 tsp
12. Chilli powder - 1 tsp (optional)

B. For the batter :
1. Flour - 2 cups (about 200gm)
2. Eggs - 3
3. Oil - 1 cup
4. Baking powder - 1tbsp
5. Salt - to taste
6. Crushed pepper corn - 6-8
7. Roasted Garlic sliced - (5-6 cloves of garlic) ** (I roasted the garlic as given here)
8. Butter - 1 tsp
9. Milk - 1 cup

C.For the final tempering
1. Butter - 1-2 tbsp
2. Red Chilli - Roasted and ground into flakes - 1 tsp
3. Roasted Garlic sliced

Procedure :
A.Filling
1. Take ingredients Sl. No. 1-6 in 'B' of Ingredients and pressure cook.
2. Chop the blanched carrot and beans into small cubes
3. In a wok, take some butter and when hot, add the sliced babycorn.
4. Fry till golden.
5. Add the cubed carrot-beans and stir fry. Add some salt and pepper.
6. Lastly add the boiled boneless chicken pieces and again saute for 2-3 minutes.
Keep aside

B. Batter
1. Whip 3 eggs and keep aside
2. As in making a cake, mix the flour and the baking powder well.
3. In a bowl, mix the whipped eggs, oil
4. Now in a big mixing bowl, mix together the flour+baking powder, egg+oil, salt, crushed pepper. Beat the mixture well
5. Now add the stirfired chicken-carrot-bean-babycorn into the batter .
6. Add some sliced roasted garlic
7. Mix well.

Preheat the oven for 5 minutes.

After spraying oil in a baking container, pour the chicken-vegetable containing batter

Bake at 180 deg Celsius for 25 minutes.

Insert a knife and if it comes out clean, it's done....else bake for another 5-10 minutes

Now in a skillet heat 2 tbsp of butter, add some roasted and flaked red chillies, slices of roasted garlic.
Now pour this butter-chilli flakes-garlic combo on the baked dish (as in chhaunk) The baked goody is ready to be sliced and eaten with some sauce.
*It makes a great breakfast dish ...
I had it with a cup of tea and finished off the breakbast with some fruits (a bowl of Papaya & Banana).

paneer/mushroom/cauliflower florets/carrot/bean/baby corn/corn kernel etc.

I gave some fruits (mango cubed) and hey presto! A wholesome nutrituous snack/light lunch box was ready!
