Dimer Dalna (Poached Egg Curry) Shakshouka Style

Shakshouka ...Bengalified !



That the easy peasy Poached Egg curry was a dish with a fancy name (Shashouka), was something I learnt during random cookery reels on social media.

In my kitchen this simple poached egg curry was born around 27 years back when I had started living on my own and more importantly started cooking without Ma's supervision. No need to boil the eggs...Easy, Quick, dinner ready in minutes.

Much much later, came to know that it's a dish on its own merit with a fancy name too.

Here's my Bangali Shashouka or Poached Dimer Dalna :

Ingredients : (Serves 4)

1. Eggs - 4
2. Chopped Onions - 2 
3. Pureed Tomatoes - I used 4. .... The more the merrier...completely a personal choice
4. Whole Garam Masala - Cinnamon. Cardamom (green), Cloves
5. Whole dry Red Chili - 1 or 2
6. Bay Leaf / Tej Pata - 1 or 2
7. Ginger Garlic Paste
8. Whole garlic cloves - because I love fried garlic...may be skipped
9. Masala Paste - Turmeric+Cumin+Coriander+Red Chili+ Kashmiri Chili
10. Salt to taste
11. Milk Cream (Accumulated Malai) - a bowl...again completely optional...I had  a bowl ...hence used
12. Chopped Coriander Leaves
13. Green Chilies-As per heat tolerance 
14. Mustard Oil  - 3 tbspn

Procedure :


1. Heat mustard oil until it reaches smoking point. Add whole garam masala, red chilies, and bay leaves to temper.

2. Add garlic cloves (if using) until lightly browned. Then add onions, ginger-garlic paste, and a pinch of sugar. Sauté until golden.

3. Stir in tomato puree. Cover and cook for 2–3 minutes until softened.

4. Now add the masala paste mentioned at Sl.9 of Ingredients followed by the malai / milk cream..Cook on high for 3–4 minutes to eliminate raw flavors.

5. Now make four (or as many eggs you have) circular hollows on the bed of the gravy. (Picture 5).  Break the eggs one at a time into the hollows. I break the eggs , one at a time into a small bowl and slide each egg into the hollow gently. Lower the flame. Cover and cook till the eggs solidify. If you like runny yolks, the cooking time at this stage will be lower. This is a personal choice.

6. Garnish with chopped coriander, slit green chilies. Serve with rice, bread or just as it is. .... 

We had our shakshouka style easy Bengali egg curry for dinner with steamed rice.

Quickfix medley-chicken (keema/mince), mushroom, boiled eggs


This is a non-recipe.
Weekend fridge leftovers...1/2 bowl of leftover cooked chicken mince, 3 day old button mushrooms. Semi soft Boiled eggs + mushrooms...both sauted in ghee (wanted to do it in butter but realised had run out of it) and spiced up with pepper & chili flakes quite liberally. ... And finally mixing it all up with the chicken keema (mince) which had been cooked in garlic butter with chopped onions, chopped ginger-garlic, salt, pepper and chili powder.




 Makes a good side dish this with bread, roti...but I had it with steaming hot rice.....

Chocolate Lava Cake


2 birthdays in the family a span of 4 days!! So this time thought of giving the usual sponge cake a miss..and made Lava Cake Muffins and one small cake in an aluminium foil rectangular container.

Ingredients :
*100g dark chocolate, chopped- I used Bournville Rich Chocolate 
*100g butter
*150g light soft brown sugar-I used 100gm normal white sugar
*3 large eggs
*1/2 tsp vanilla essence
*50g plain flour
*coffee powder / cocoa powder (optional)

Method
11. Preheat the oven to 230C. 
22. Put the chocolate and butter in a heatproof bowl and set over a pan of hot water (or alternatively put  in the microwave) and stir until smooth, then set aside to cool slightly for 15 minutes.
33. Beat the eggs and Mix in the sugar, and keeping mixing with the eggs, and add  into the chocolate-butter mix followed by the vanilla extract and finally the flour. 
  4. Spray/Smear oil in the muffin tray and the aluminium container. Sprinkle cocoa powder/coffee powder to line the moulds (optional) 
  5. Divide the mixture among the muffin moulds and aluminium container.
46. Bake the muffins for 7-8 minutes at 230 deg C and the aluminium container (slightly bigger) for 12-13 minutes or until the tops are firm to touch but the middles still feel slightly squidgy. Carefully run a knife around the edge of each pudding, then turn out onto serving plates and serve with single cream/vanilla icecream or have it just like that.

A bowl of Soup to calm a cold-cough-fever ridden cranky toddler

Chicken with Veggies & Egg Soup


A cranky toddler down with cold-cough-fever, holed up indoors for 4 long days....just needed to be perked up with something she loved....SOUP! So a bowlful of hearty wholesome soup it was.....

I did not have chicken stock...I more often than not, dont. But that hardly matters.....There's always an alternative and a pressure cooker....

So here it is...any vegetable can be used. I used the ones I had....

Ingredients
2 boneless chicken leg pieces or 1 large chicken breast - chopped into small pieces
1 Carrot cut into tiny cubes
3-4 french beans chopped into tiny pieces
A handful of corn kernels (I used frozen)
A handful of fresh peas 
1/2 Capiscum chopped 
Chopped onions - 1
5-6 cloves of garlic-sliced
fresh ginger - 1/2 inch - cut into thin strips
pepper corns-freshly crushed : 4-5
Black Pepper powder
Tej Pata - 1 or 2
Salt to taste
Butter - 1 tbsp
Sesame Oil - 1 tbsp
Eggs - 2

Got the idea to add the beaten eggs to the soup and to use sesame Oil , from Soma's Egg Drop Soup. 

Procedure :
1. In a large pressure cooker, heat butter. Add the Tej Pata, sliced ginger & garlic, crushed pepper corns and finally the chopped onions. Stir till the onions turns translucent.
2. Add the bit sized chicken pieces. Stir around on high heat till slightly browned. Add the fresh peas
3. Add 2 mugs full of water. And pressure cook till 2 whistles go off. If you have chicken stock, add only 1/2 mug of water and pressure cook the chicken and them add the chicken stock and again bring to a boil.
4. While the pressure cooking is on, heat a tawa without oil and dry roast the chopped capsicum. Dont overcook..just to remove the moistness/rawness of capsicum and to give it a smoky flavour.
5.After release of the pressure, take off the lid of the cooker, raise the heat and again bring to boil. When boiling, add all vegetables except capsicum/bell pepper and boil for a minute or less. The vegetables should retain their crunch and not turn soggy. Add the dry roasted capsicum.
6.Adjust the salt and pepper. Add a drizzle of sesame oil into the boiling soup.
7. Beat 2 eggs. Lower the heat and add the beaten eggs slowly in a thin stream while stirring (with a fork) the simmering soup in one direction as described in Soma's Egg Drop Soup. My egg ribbons/strands were not as fine and delicate as hers ..but tasted smooth and silky!

Serve Hot!!!
To see the kiddo's eyes light up with joy as she slurped the steaming bowl of soup was an immense relief after a long day of seeing her being ill and moody!

Chicken-Spinach Frittata in Microwave


A one pot meal containing meat , greens, eggs! Frittata is the answer to Mealtimes blues especially so because my kids LOVE eggs!

And more often than not, I skip the oven top followed by grill mode of making frittatas and go for the one shot microwave mode!!!!

Ingredients :
Eggs - 3-4
Chopped onions
Boneless chicken pieces cut into bit sized pieces or shredded. If marinated in lemon/vinegar + salt + pepper + ginger + garlic, makes things easier....
Spinach - 5-6 mini bunches, washed, drained and chopped
Baby corn - sliced into thin discs.....as many
Chopped coriander
Garlic 8-10 cloves, finely chopped
Salt
Pepper
Chilly-Oregano powder
Any other herbs (fresh/fried) of choice
Chilli flakes
cheddar cheese - 1 cup.

Any other veggies or ingredients like capsicum, spring onions, carrots, beans, Mushrooms, cauliflower, broccoli etc etc can be used after sauteing / blanching in salt water

Procedure:
1.Heat some oil in a wok/kadai and throw in a tej pata, followed by crushed pepper corns and chopped/sliced garlic. Add the marinated chicken pieces. When the chicken is almost done, add the sliced babycorn and fry them along with the chicken. Fry on medium to high heat till browned and crispy. 

2.Simulaneously, in another wok/vessel, with/without oil, throw in the chopped spinach along with a pinch of salt and sugar and turn on the heat to high/medium and cook without any cover. Let the spinach give out the water and continue till the water dries up but the spinach is still moist.

3. Beat 3-4 eggs till fluffy. Add some fresh cream of milk or milk. (optional) Add salt & pepper and herbs of choice. I added chili - oregano mix. Mixed well





4. In a microwaveable flat bottomed container, make a bed of spinanch, top it up with fried chicken-babycorn. Pour the beaten egg on it.

5.Put it in microwave (HIGH) mode for 10-15 minutes (depending on the microwave). The bottom should have set and the top should still be slightly runny. 

6. Sprinkle the grated cheese. And put it in Micro+Grill mode for around 10 minutes or till the cheese melts and browning starts. In microwave, though, the browning is quite minimal despite cooking on grill mode.

7. Take it out, garnish with chopped coriander. 

I served it hot with potato wedges, sliced tomatoes.

But basically can be served with anything...bread, mashed potatoes, grilled veggies, salads or just as it is....

A Quick Banana Cake


When your fruit basket is weighed down by a bunch of over ripe bananas that nobody in the family (including you) will touch, you know something HAS to be done to avoid the fruits from going straight to the bin. Well, that's exactly how this cake happened to happen in my kitchen. Otherwise I am not much of a baker and would never ever volunteer to bake a banana cake, of all things..... ;)

Ingredients :


Ripe Bananas - 3
Eggs -
Flour / Maida - 2 cups
Sugar - 3/4 cup
White Oil - 1 cup
Baking powder - 1 tsp
Vanilla Essence - 1 tbsp
Fresh Cream / malai - 3 tbsp
Cinnamon sticks - 2-3"
Broken Cashew - a handful
Salt - a pinch

Procdeure :
1. In a mixie jar, put the following and mix:
     a) peeled and chopped bananas
     b) eggs
     c) sugar
     d) fresh cream / malai
     e) oil
  Pour into a wok like vessel or mixing bowl.

2. In a container, pour the flour, baking powder, powdered cinnamon and a pinch of salt. Mix well.

3.Pour the dry mix into the wet one. Gently fold in to combine.

4. Add vanilla essence & cashew pieces. Fold in .

5. Pour the batter into a preheated and greased cake mould. The oven is to be preheated to 250 deg C for 8-   10 min.

6. Set the OTG in 'baking' mode, at temp 175-180 deg C for 45 minutes.

 

Insert a fork / toothpick into the cake and if it comes out clean, the banana cake is done.

Let it cool in the oven and then cut a thick slice ...the taste is mildly sweet with a hint of banana flavour.
Eat it just as it is . I had mine with chocolate sauce, garnished with roasted almonds! And despite being quite a banana hater, I loved the cake!!

Pan(fried) Pseudo Pizza!!


It looks like a small sized pan pizza. Tastes quite like one....well, almost! But the difference doesnt make it any less tasty! Inspired by Indira Mukherjee, I have adapted to make it simpler and faster. This recipe suits me fine on the "Onno kichhu khaabo" (Something different from regular stuff!!) days.

Here goes the recipe :


Ingredients : yielded 4 nos. 1/2" thick 6" dia pseudo pizzas
All purpose Flour (Maida) & Milk in 1:1 ratio
Egg - 1 for 1 cup Maida:1cup milk (200ml cup)
Any Grated / finely chopped vegetables like carrot, bean, cabbage, capsicum, cauliflower/broccoli florets, babycorn etc
Garlic - 3-4 cloves - chopped
Salt
pepper
Chili flakes
Oregano & dried herbs-I used FabIndia's Chili-Oregano & Italian seasoning
Grated Mozzarella cheese - 1 bowl (200ml)
For topping -Boiled corn kernel /Chicken sausages/nuggets/mushroom/paneer cubes/soya chunks etc etc
Diced Onions - 1 medium

Procedure :
1. Mix Milk and Maida and add the egg, Salt & pepper Mix well with a hand blender. The batter is thick but of pouring consistency.

2. Add the chopped garlic and all the grated/chopped vegetables.

3. Keep the topping ready (the choice is yours...I used paneer cubes+diced onions on one occasion and chicken sausages+corn kernels+diced onions on another) stir fried or sauted.


4. A small pancake frying pan makes the base preparation a cake walk. Pour a ladle full of veggie mixed batter and spread it to cover the whole pan. Pour some more to increase the thickness of the base. Cook on minimum heat. While frying the base on gas stove top, keep the oven ready for next step by preheating oven (I used my OTG) at around 225-250 deg C.



5. Flip the pancake pizza or pseudo pizza base and let the other side cook.



6. Now on a flat ovenproof plate, place the (Pseudo) pizza base, arrange the toppings and sprinkle desired quantity of grated mozzarella. Sprinkle the italian seasoning and dried oregano and other herbs of choice.






 7.Place it in the preheated oven on Grill mode at 225-250 deg C for around 5-7 minutes or till the cheese melts and gets a golden colour!



Ready to serve!!

Hunger pangs and Frittata



Lunch skipped. No time to satiate my mid afternoon hunger pangs. Hallucinations of sinfully delicious cheese omelettes. Can you imagine my plight in office???? Even while driving back home, I was dreaming of the smell of eggs being fried, with my eyes wide open!!

The ravenous me attacked the fridge with full vigour and in a jiffy I had all I needed for a sinfully delicious stuffed omelette. The sausages sliced, onions & tomatoes ready (I always have some chopped onions & tomatoes in air tight containers for such emergencies!), cheese grated, eggs beaten and just as I was about to go ahead with the dish of my afternoon cravings, I changed my mind and what followed, culminated in a frittata !!



Ingredients :
Eggs - 2
Sausages - 3-4 (sliced)
Milk - 3-4 tbsp
Onions - 1 small - sliced
Tomatoes - diced - 1 small
Processed Cheese - 1 cube
crushed pepper - to taste
chopped green chilies - to taste / optional
chili flakes - to taste
Capsicum - 1 diced
Sweet corn kernels - a handful
Peas- a handful
Coriander leaves - 1/2 cup chopped
butter/oil (I used butter!!!)
salt to taste

Procedure :
1. Beat two eggs. Add 3-4 tbsp of milk/milk cream and keep beating till fluffy. Add salt and pepper...beat some more. And keep aside

2. Switch on the oven at around 200 deg. F for 10-15 minutes, to preheat

3.In a frying pan, add some oil. Throw in the onions. Fry till light brown.

4. Fry the sausages with tomatoes and capsicum

5. Add the sweet corn kernels, peas and add the salt pepper, chili flakes & green chillies. Toss around once again in the pan.
6. With the spatula, spread the fried stuff evenly on the pan and pour the beaten egg+milk/cream mix. Tilt the pan to spread the egg evenly to cover all the veggies and sausages. Keep on low flame for the egg to set.

7. When the top is almost set (but not fully), sprinkle the grated cheese and continue to cook on stove top on low flame till the cheese starts to melt.

8. Transfer the pan (after removing the handle) to your preheated oven and cook on grill mode for 5 minutes. I like my cheesy fritatta tops soft, with the cheese melting in my mouth. If you like the top crispier and browned, keep it in the grill for some more time while monitoring it.

9. Garnish with chopped coriander.
Enjoy!!!!!

I ate like a glutton....had almost 3/4th and suddenly remembered my little baby who loves eggs!
Dinner was a cakewalk with the fritatta and was over even before I could spell it out!!!

This can make a wonderful breakfast or brunch and can be packed in kids' tiffin. It can be eaten as it is (as I did) or with bread roll/slices or mashed potatoes!

Note : I used all the sinfully high calorie stuff....like cheese, butter, milk cream etc etc....it was an indulgence I should not practise often!!! Using olive oil, low fat milk, crumbled ricotta cheese/paneer will definitely be a healthier and low calorie option!! But........

Nameless Delight!

(Baked Bread stuffed with the goodness of vegetables, chicken and anything & everything healthy and tasty)
A dish without a name!

So dear friends, the onus lies on you to find one for this dish, once you read about it!
When visiting a cousin, she'd made this delicious preparation.
With hardly any time to note down or even hear the recipe, all she could say was "make it like a Cake sans the sugar but plus some salt and add anything as filling to it"...

She'd made it with chicken...when I decided to try out this Cake sans the sugar, I decided to make it more wholesome, and added chicken and some veggies too....

So without much ado, here goes the recipe...


Ingredient :
A. For the filling
1. Boneless Chicken pieces - 150-200gms
2.Onion finely chopped - 1
3. Cardamom-2
4.cinnamon stick - 1 (1" piece)
5. Bay leaf
6. Ginger + Garlic paste - 1 tsp
7.Carrot - blanched
8 Beans - blanched
9. Baby corn - 4-5 sliced
10. Butter - 2tbsp
11. Crushed pepper - 1 tsp
12. Chilli powder - 1 tsp (optional)

B. For the batter :
1. Flour - 2 cups (about 200gm)
2. Eggs - 3
3. Oil - 1 cup
4. Baking powder - 1tbsp
5. Salt - to taste
6. Crushed pepper corn - 6-8
7. Roasted Garlic sliced - (5-6 cloves of garlic) ** (I roasted the garlic as given here)
8. Butter - 1 tsp
9. Milk - 1 cup

C.For the final tempering
1. Butter - 1-2 tbsp
2. Red Chilli - Roasted and ground into flakes - 1 tsp
3. Roasted Garlic sliced

Procedure :
A.Filling
1. Take ingredients Sl. No. 1-6 in 'B' of Ingredients and pressure cook.
2. Chop the blanched carrot and beans into small cubes
3. In a wok, take some butter and when hot, add the sliced babycorn.
4. Fry till golden.
5. Add the cubed carrot-beans and stir fry. Add some salt and pepper.
6. Lastly add the boiled boneless chicken pieces and again saute for 2-3 minutes.
Keep aside

B. Batter
1. Whip 3 eggs and keep aside
2. As in making a cake, mix the flour and the baking powder well.
3. In a bowl, mix the whipped eggs, oil
4. Now in a big mixing bowl, mix together the flour+baking powder, egg+oil, salt, crushed pepper. Beat the mixture well
5. Now add the stirfired chicken-carrot-bean-babycorn into the batter .
6. Add some sliced roasted garlic
7. Mix well.

Preheat the oven for 5 minutes.

After spraying oil in a baking container, pour the chicken-vegetable containing batter

Bake at 180 deg Celsius for 25 minutes.

Insert a knife and if it comes out clean, it's done....else bake for another 5-10 minutes

Now in a skillet heat 2 tbsp of butter, add some roasted and flaked red chillies, slices of roasted garlic.
Now pour this butter-chilli flakes-garlic combo on the baked dish (as in chhaunk) The baked goody is ready to be sliced and eaten with some sauce.
*It makes a great breakfast dish ...
I had it with a cup of tea and finished off the breakbast with some fruits (a bowl of Papaya & Banana).

The chicken in the recipe can be removed or replaced with any or many of the following :
paneer/mushroom/cauliflower florets/carrot/bean/baby corn/corn kernel etc.

I gave some fruits (mango cubed) and hey presto! A wholesome nutrituous snack/light lunch box was ready!
